Buffalo-Style Chicken Slaw
Yields:
4 servings

Ingredients

  • 1/3 cup plain, fat-free yogurt
  • 1 Tablespoon low-fat mayonnaise
  • 1 Tablespoon Red's Hot Sauce or other hot sauce, lowest sodium available. Adjust to taste if you like more spice.
  • 1/4 teaspoon ground black pepper
  • 1 bag coleslaw mix
  • 2-3 cups shredded chicken*
  • 2 celery stalks, diced

Instructions

  1. Combine yogurt, low-fat mayonnaise, hot sauce, and black pepper in a bowl and mix until combined.
  2. In a separate bowl, combine coleslaw, shredded chicken, and celery.
  3. When ready to serve, combine sauce and slaw mix.
Notes
*You can use any leftover cooked chicken, canned chicken in water, or rotisserie chicken. Remove skin and shred chicken breast or thighs into small peices if using rotisserie. A standard rotisserie chicken produces about three cups of chicken.
This recipe can be made in advance. Keep the sauce separate from the chicken coleslaw until ready to serve. Keep in an airtight container in the refrigerator for about three days.
