Summer Peach Salsa

Calling all peach lovers! Kirkwood Peach Festival
Just back from the amazing Peach Festival at the Kirkwood Farmers' Market, inspired by all that juicy goodness, I whipped up a fresh, summertime salsa bursting with flavor and local ingredients all at wallet-friendly prices! Peaches are a good source of vitamins A and C, and tomatoes add lycopene, an antioxidant important for heart health.1 With just a touch of lime juice and an optional kick of chili powder, it’s perfect for summer BBQs and poolside snacking! Serve as a healthy dip with tortilla chips and veggie dippers, topping for tacos, or liven up any summer dish!

This recipe will yield approximately six servings and here's what you'll need:

  • 5-6 medium fresh peaches (or 2 28-oz cans of diced peaches, no added sugar)
  • 1 fresh tomato, diced (or 1 14-oz can of diced tomatoes)
  • 1 whole medium red onion, diced
  • 1 whole jalapeño, seeded and diced (adjust amount for spice preference)
  • ½ teaspoon salt
  • Juice of 1 lime
  • ½ bunch fresh cilantro, chopped (optional)
  • ¼ teaspoon chili powder (optional)

Summer Peach Salsa

Instructions:

  • Combine all ingredients in a bowl and mix gently.
  • Wrap the bowl in plastic wrap or pour the contents into an airtight container and place in the refrigerator for at least 1 hour before serving.
